Star chef Nikodemus Berger offers his own cooking classes at first-place Studio32 in Berlin: “The challenge is that participants join a cooking class for very different reasons. In one of my classes, for example, we had a butcher who wanted to expand his vegetarian offerings, an experienced cook who brought his own knife set, and of course absolute beginners too.”
In the end, everyone should have a great evening, discover new recipes, learn something new, and enjoy the meal at the end. “It's important to me that participants leave with a sense of accomplishment. I help things along a bit to make sure it turns out well in the end,” the chef admits.

Berlin Is a Hotbed of Culinary Innovation
A full eleven cooking schools in the top 30 list are located in Berlin. The popularity of cooking schools in the capital may be tied to Berlin's reputation as an especially innovative culinary scene.
The up-and-coming fine-dining chef behind Studio32 has an explanation for this: “Berlin essentially has no cooking tradition of its own — traditionally, you'll find currywurst, pork knuckle, and Königsberger Klopse here, which strictly speaking originated in Poland. Because there's no strong tradition, there's a lot of room for innovation in Berlin's food scene. The more a concept stands out from the rest, the more successful it becomes in Berlin.”
The Trends: Fast Food Instead of Fine Dining
While healthy, balanced eating and trends like zero-waste cooking dominated in recent years, the movement today is shifting back toward fast food. “Many people no longer plan a restaurant visit as an evening-filling event. Fast meals matter more now,” says Nikodemus Berger.
At the same time, meat consumption is rising again. “There are more and more vegetarian and vegan options, but at the same time meat is pushing back into the spotlight,” the chef observes.
According to Berger, fast-food chains are benefiting: “They process cheap meat and are booming because they stage compelling marketing strategies.” Sustainable restaurant concepts are suffering under current trends. Zero-waste concepts like nose-to-tail cooking, which focuses on using the entire animal, don't work as well today, in his view: “People want to eat steak again.”
The chef isn't worried about his restaurant Bonvivant, which serves regional, vegetarian cuisine: “Vegan cuisine still holds an important place and has plenty of ground to make up in many areas. It takes people willing to lead the way. If there are no good vegetarian restaurants, who's going to convince people otherwise?”
