About this class
What you’ll do in the class
It starts with a trip to Paul Bocuse's French cuisine. We start with the absolute basics, climb up the cooking ladder and finish with meat.
After an introduction to the topics of kitchen hygiene, measurement units and food science, it's off to the kitchen. In practice, we focus on the following topics:
- boards and knives
- cutting techniques
- Buy, prepare and professionally process vegetables
- Preparation methods such as blanching, steaming, roasting, sautéing, braising
- Prepare basic soups
- Prepare basic sauces (jus, béchamel, veloute, bolognese)
- spices (herbs and spices)
- Prepare filling side dishes (potatoes, rice, pasta)
- lipids
- Plan a menu correctly
- In between, of course, we try our prepared dishes again and again!

- All ingredients and utensils
- Recipes for the cooked dishes
- 2 glasses of wine, beer or soft drinks

RunningPapaya
Michael Hoffmann completed his cooking apprenticeship at the 5-star hotel Bayerischer Hof. He also studied nutritional science and completed continuing education as a nutrition coach. Since 2016, he has been cooking regularly in his own cooking school and sharing his knowledge.
