Class description

The steam noodle is a Palatinate national dish; as yeast dough, it is somewhat similar to apricot dumplings, but is not “baked” in pure steam, but in a (cast iron) pan with a salt crust.

The author of the steam noodle cookbook Yvonne Graf shares her knowledge with you based on a Palatinate recipe that is over 150 years old. In our cooking class, we will prepare the yeast dough together, knead, sizzle and make a steam noodle burger from the golden brown baked steam noodle.

The finished steamed noodle burger goes perfectly with Riesling. During the yeast dough walking time, a Riesling wine tasting with winemaker Barbara Roth awaits you, who will taste the Riesling sparkling wine and the two Riesling wines together with you.

The tasting box is enough for 2 people and includes:

wines:

  • 1 bottle of Riesling sparkling wine brut 0.75l
  • 1 bottle of 2020er Riesling Feinherb, cabinet 0.25l
  • 1 bottle of 2020er Riesling Petersbuckel, dry late harvest 0.75l
  • Handout with wine expertise to read

Ingredients for the steam noodle:

  • 1 kg Palatinate steam noodle flour
  • 1 can of saumagen
  • 1 glass of genuine Palatinate saumagen mustard (200 ml)
  • 400 gr. sauerkraut
  • 1 jar of gherkins
  • Palatinate steam noodle recipe — LUDA
  • Vanilla sauce recipe
  • shopping list
  • List of cookware and other equipment
  • Preparation guide

All wines and sparkling wines are German products and contain sulfites.
