About this class

Fermented drinks such as kombucha, water kefir and fruit sparkling wine are natural probiotic bombs — fizzy, refreshing and full of vibrant cultures that strengthen your microbiome and make all ages happy. The perfect healthy refreshment for hot summer days and a lively alternative to soft drinks and alcohol.

What you’ll do in the class

  1. Introduction: After a welcome drink, we will highlight:
    • History of fermented drinks worldwide — from Tibetan kefir to Japanese kombucha
    • How live cultures support your microbiome, digestion, and immune system
    • Why fermented drinks are the healthier alternative to soft drinks and industrial soft drinks
    • The art of the “second ferment” — how to develop flavors and fizz with seasonal summer fruits and herbs
  2. Practice: Together, we produce three different fermented drinks:
    • Water kefir — light, sparkling and infinitely variable with summery fruits
    • Kombucha — the classic with tea base, refined with wild herbs and floral aromas
    • Low-alc fruit sparkling wine — naturally sparkling from seasonal summer fruit
  3. Q&A for all questions about working safely, SCOBY care, developing your own flavors and storing live bacteria when you're on summer vacation.
  4. Conclusion: Joint tasting of various fermented drinks.
