Through our new Vegan by Chance workshop series, we’re diving into how some of the most delicious plant-based dishes around the world were created in kitchens where ingredients were simple, local, and often influenced by necessity.
In many cultures, the concept of a “poor kitchen” doesn’t mean less richness in flavor—it’s about resourcefulness, creativity, and making the most of what’s available. Whether it’s the humble, hearty stews of rural Italy, the inventive kosher dishes, or the vibrant dishes from African and Caribbean communities, these recipes prove that classism has no place in the richness of food.
