Class description
Have you ever wondered where sushi comes from? Originally, sushi was a method of removing fresh fish, filling it with salt and placing it in jugs between steamed rice until the whole thing ferments. When the Japanese began specifically acidifying rice with vinegar in the late 16th century and placing it in wooden boxes with salted fish slices, it had a much longer shelf life and the rice was still edible and could be enjoyed with it.
Sushi was initially only known in Asia until people began to produce sushi in bite-size portions at the beginning of the 19th century and the enthusiasm spilled over to America and Europe. Sushi has now become an integral part of the culinary world!
