What you’ll do in the class
At the beginning of the workshop, you will receive a brief introduction to the world of fermentation. Together, we'll look at what fermentation actually is, why people have been fermenting for centuries and what benefits fermented foods can offer in everyday life. You will also learn the most important basics: Which ingredients are suitable? What do you need to get started? And what should you pay attention to so that the fermentation is successful?
After the short theory part, we will start the workshop in practice. Step by step, we will prepare various vegetable ferments together using classic brine. In the entry-level course, we ferment:
- pickles
- radishes
- onions
In doing so, you'll learn:
- How a brine is made
- Which ratio of salt and water is important
- How to properly prepare vegetables
- What should be considered when it comes to hygiene and storage
- How to continue to ripen ferments safely at home
During the workshop, there will be enough time to ask questions, exchange ideas and try things out together. The aim is that in the end you not only take your own ferment home, but also feel safe to continue fermenting yourself at home.
The workshop is deliberately designed to be simple, suitable for everyday use and beginner-friendly — without any previous knowledge.
