About this class
Together we will cook a menu that combines the delights of Italian holiday cuisine from north to south.
What you’ll do in the class
The 4-hour cooking class in Berlin will give you an introduction to the world of festive Italian cuisine. The start of our trip is Apulia in southern Italy: the home of Italian fresh cheese burrata. We cook filetti di peperoni su pure di fave e burrata e capperi croccanti, i.e. burrata with paprika fillets on broad bean puree and crispy capers. Then it's on with the Genoese specialty Focaccia de Genovese. Together we bake the airy flatbread with olive oil and herbs. In the main course, we form gnocchi di patate con salsiccia e tarassaco (potato gnocchi with salsiccia and dandelion) together. We also fry juicy guinea fowl breast with pistachio crust and grape sauce (petto di faraona in crosta di pistacchi con salsa d'uva). As a sweet end to our short trip, we enjoy Italian crepes ripiene al mascarpone e noci con gelato alle pere e vino moscato (Italian crepes filled with mascarpone and walnuts, plus pear ice cream and Moscato wine).
