Disassembly workshop in Chemnitz: What is the process?

Two days you'll never forget!

Experience craftsmanship in its purest form with us. Visit the suppliers at Metzgerei Gränitz and understand why good meat is so valuable. See how the animals live and talk to the breeders in person. On the first day, we will visit Duroc, Angus, Wagyu and, if time permits, the water buffalo farm in a small group.

On the second day, you can be the butcher yourself under detailed guidance. Cut half a beef and learn how to cut Sercreto, Flat Iron, etc.

The workshop is always held with exactly three participants, because the personal learning effect is particularly important to me.
Day 1: In the afternoon after arrival, visit the animals in Gornsdorf, Mittelbach and Wiesenburg by appointment (depending on the schedule)

Day 2:7:00 a.m. Start at the butcher shop. On request, grind the knife, dress the protective equipment and cut up half of the cow. Depending on completion, it will end around 14:00. Purchase of disassembled meat products at a preferential price, depending on your wishes.
