About this class
A basic course with Vivian — traditional, loving, step by step
Sushi is more than raw fish and seaweed paper — it's a philosophy. An art that turns simplicity into pleasure. And it is precisely this art that Vivian brings you closer to in this basic course. In a quiet, clearly structured evening of classes, she introduces you step by step to the world of sushi — without pressure, but with a lot of feeling.
We start with what everything is built on: rice. How is it washed, cooked, seasoned? Which variety is the right one — and why is that so crucial? You will then get to know the most important ingredients, get a feel for knives, cutting techniques and the right preparation.
And then it's time to roll: Maki, inside-out, maybe a bit of Temaki — Vivian patiently shows you the basics and takes away any uncertainty. Whether you stay vegan or use classic fish is up to you — the focus is on quality, precision and mindfulness in what you do.
A course for anyone who wants to get to grips with sushi — with clarity, craftsmanship and a deep respect for Japanese culture. Not quick DIY, but real learning.
