Dive into the exciting world of fermentation and experience how delicious, lively ferments are made from simple, seasonal ingredients. In our workshop, you will learn how to make healthy, aromatic and creative ferments yourself — from classic sauerkraut variants to spicy kimchi.

We go on a journey of discovery through the fermentation kitchen together:
- 2x ferments made from one seasonal ingredient (e.g. apples, sauerkraut, mushrooms or cabbage)
- A traditional homemade kimchi
- Tasting another ferment such as kombucha or a kimchi variant
What you’ll do in the class
After a hearty welcome drink and a brief introduction to the art of fermentation and its health benefits, you'll dive in for a hands-on experience. Under the guidance of our experienced instructors, you will produce your own ferments step by step.
You'll learn:
- The basics of fermentation: microorganisms, salinity, temperature & safety
- Techniques for fermenting various ingredients
- Tips for combining flavors, textures, and seasonal ingredients
- The correct storage and care of your ferments at home
- Creative options with seasonal ingredients
At the end, there is a joint tasting of all produced ferments and time for exchange, questions and inspiration. Let yourself be surprised by new taste experiences!
