Mardi Gras doughnuts were once considered a symbol of joie de vivre. At a time when it was not available all year round, but only baked in the so-called high carnival, on the last days of Mardi Gras. Craftsmanship goes without saying. Fluffy and light, in the middle with the pale ring, which used to be called the “Ranftl” in Vienna, filled with the best apricot jam — right in the middle — and covered with snow-white sugar.
How does the baking class work?
In this course, we bake fine carnival donuts and also the simpler flat farmer's doughnuts. We'll show you how to make donuts perfectly at home and what tricks there are to consider when making dough and frying. They are traditionally filled with apricot jam and in addition, our French confectioner Anne makes heavenly vanilla cream for the modern version of donuts.

The baking class takes place at a baking school in Vienna. In a real bakery, you'll learn how to make delicious rye sourdough bread so that no one can keep their hands off it anymore. The baking school is well equipped. In addition to the best ingredients for your creations, all baking utensils and numerous ovens are available.

What to bring?
- Clothing that can get floury and suitable, slip-resistant footwear for the bakery.
- We provide carrying bags to carry the baked goods. Of course, we appreciate your help in handling paper and plastic carefully and would like to thank all participants who bring their own carrier bags for the baked goods.
What is included?
- All homemade fritters are taken home, and the baked goods made by the workshop leader are tasted as part of the course.
