How does the baking class work?

  • When you arrive at the bakery, you will be warmly welcomed by our baker.
  • Then we'll explain to you why sourdough is essential, especially when baking with whole grains, and why grains should never get too warm when ground.
  • We then grind fresh whole grain flour and show methods and recipes that guarantee juicy whole grain baked goods.
  • Of course, we also provide tips on how to handle ancient grains, their baking properties, processing and special features.
  • For a better understanding, there is also valuable information about cereal grains and the correct instructions for milling.


What are we going to bake?

  • 100% wholemeal bread made from forest perennial and wholemeal single-grain flour
  • Vinschgerl made from rye and wholemeal grain flour
  • Fluffy loaf of bread with wholemeal emmer flour

We bake 100% whole grain products and baked goods from light and whole grain flours, which show how whole grains can be used as a structure and flavor enhancer.
