This course focuses on durum wheat, which is widely used in Italy, and the traditional Italian sourdough, the Lievito Madre. We bake Pane Pugliese durum wheat bread typical of southern Italy and airy focaccia and also show how coarse-pored ciabatta made from Italian flour is best. For all doughs, we use Italian wheat sourdough Lievito Madre, which, with its mild aroma, is perfect for pure sourdough breads without added yeast.
