About this class
Do you want to surprise your loved ones for breakfast with fresh warm pretzel pastries? You can definitely do that with homemade pretzels. You don't even have to get up too early, as the dough is made the day before and is already maturing in the fridge. We also prepare a delicious Obatzda that tastes so delicious with pretzels that it almost has to be made with it. I'll show you how it works.
The course is over two days. On the first day, we prepare the dough. On the second day, we form the pastry lye and bake it.
What you’ll do in the class
On the course date, we will meet via video conference and I will explain to you in detail how you can make delicious pretzel pastries. In doing so, you'll learn how to:
- Make a starter dough
- Perfectly knead the dough for pretzel pastries
- Form pretzel pastry pieces from the dough
- The dough pieces are lye and crispy
- Make a delicious Obatzda
This baking course is divided into two parts. The day before the first part of the workshop, you will make the starter dough yourself using the recipe. In the workshop, we will prepare the dough together on the first day. On the second day, shape the pretzel pastry and bake until crispy brown.
The main utensils and ingredients that we need:
ingredients:
- 20 g pretzel beads/cookies (sodium hydroxide/NaOH) → available in specialist shops for hobby bakers, in various online shops or pharmacies (as an alternative, household baking soda can also be used)
Utensils:
- Food processor (an advantage) - You can also knead completely by hand
- oven with baking tray or rack
- Freezer space for dough pieces on a baking tray or other solid surface
- skimmer
- Baker's linen or clean tea towel
- gloves and preferably safety glasses (for lye with pretzel beads/cookies)
- Enough work space
- An internet-enabled device with a camera and a large enough screen so that you can easily follow my work steps
- A stable internet connection
