About this class

In this course, you will not only learn simple maki, but also the variety of modern, plant-based sushi creations. Maki serve as an introduction to the craft — then we focus on more elaborate highlights with different techniques, textures and forms of presentation.

Content of the workshop

At the beginning, we work out the basics: Wash rice properly, cook, season and bring it to temperature. You will learn how the rice is ideally distributed on the nori sheet and how to create clean, dimensionally stable maki — the basis for everything else.

Then it's on to the highlights of the course:

  • Grilled pointed peppers in “tuna style” — served as a nigiri or inside-out roll
  • Crispy avocado roll with panko and tempura crunch for maximum texture
  • Depending on the season: tempura vegetables or steamed eggplant in “unagi-style”

You will learn how to create different textures, how fillings are correctly placed and how sushi is presented in a visually appealing way.

Another focus is on precise cutting techniques for vegetables, the correct pressure when rolling and the professional cutting of the finished rolls.

The sushi is served with vegan soy sauce, wasabi, pickled ginger and white and black sesame.

What you’ll do in the class

After a short introduction, it's straight into practice. You'll work with perfectly seasoned sushi rice, learn how to handle the bamboo mat safely and develop a sense of tension, pressure and precision when rolling. Based on this, sushi variations are created that are visually impressive and surprising in terms of taste.

The course offers plenty of space for questions, trying things out and exchanging ideas in a group. At the end, we enjoy the sushi creations prepared together in a relaxed atmosphere.
