THE STORY STARTS HERE
Pantano, the lagoon
I remember the long summers in northern Puglia that we spent with my grandparents on the Gargano. My nonno's property, located right on Lake Lesina and known as Pantana by the locals, was the family's home. My nonno was a fisherman and had already spent the summer months with his family in Pantana. It was very easy. Water from the self-made well, no electricity, a simple “casetta” (hut) and yet nothing was missing. The day was started with coffee, the lunch break was ushered in and the day was said goodbye.
I see my Nonno sitting at the table drowning his plucked white bread in a bowl of latte e caffè and eating breakfast. He did that until the end of his life.
As you might imagine with an extended Italian family, the meal is celebrated. Time is taken, it is loud, funny and you know where the ingredients come from. I still have the wonderful smell of coffee from the moka in my nose today, which heralds the “pausa pranzo” and the evening.
That is exactly why my Nonno is the face of Caffè Pantano.
THE PATH TO MY PASSION
I have been working intensively on the topic of coffee since 2004. I bought my first portafilter machine in 2008. I was initially able to acquire my own initial knowledge of machine technology and methods of preparation through specialist books and tutorials.
In 2017, my wife surprised me with a barista taster course with Mark Czogalla from the Bonn coffee school.
From that point on, I wanted to learn more and understand more and more.
In 2018 I went to the Berlin School of Coffee for two weeks, where I completed my barista master training and got my first insights into the topic of roasting.
I was no longer primarily interested in barista topics, such as latte art or perfect preparation, but in the raw product itself — coffee.
As a highlight of my development, in 2022 I had the opportunity to be certified as a coffee connoisseur and coffeologist, with a focus on roasters, at the internationally renowned “Coffee Consulate” institute in Mannheim.
MY VALUES
Caffè Pantano began as a passion for coffee, which is an integral part of Italian culture. It brings people together and enriches life in Italy. In search of the perfect coffee experience, I have visited many cafés and roasteries since 2008. It was difficult for me to find the right coffee that met my own requirements. Sustainability, fair remuneration and fair working conditions for farmers, environmentally friendly farming and, above all, the very high quality standards of green coffee were the prerequisites. This is how the idea was born to roast premium plot coffee in order to produce a unique stimulant.
My passion led me to a deep understanding of the importance of sustainability in the coffee industry. I've learned how important it is to protect the environment and deal fairly with coffee farmers, who base their livelihoods on growing and selling coffee. I wanted to make sure that my coffee not only tastes good but was also produced sustainably. I love the aromas and taste of artisanally roasted coffee and was fascinated by the many different varieties and growing areas around the world. But I want more than just a good cup of coffee — I want to make a difference.
