Class description

Would you like to make kimchi yourself and live in Berlin? Then “Edible Alchemy” is the right place for you! We offer a hands-on kimchi course where you learn how to make your own kimchi.

Make kimchi yourself - How does the course work?

Here you will learn how to make kimchi yourself. We will talk about the most important basics of “sour canning”, but also about the food chemical background. We're talking about simple, good, traditional cuisine, but also about culinary fusion highlights!

Kimchi is not only generally called “canned vegetable” in Korean, it is also very similar to our sauerkraut in the fermentation process. And these are just two of many similarities.

They both passionately want to be kneaded with salt and both have positive effects on our microbiome in their lively, probiotic form. They use CO₂-neutral methods to preserve food. Both have arrived in the new Michelin-starred cuisine because of their round, natural UMAMI taste. These vegetables are edible alchemy!
